Francesco,

the green lines represent CIn (Convective Inhibition), and the red lines represent CAPE (Convective Available Potential Energy). These lines appear when you click on a sounding to generate an 'a parcel'.

There are pretty good discussions of air parcels, CAPE, and CIn in the two tutorials linked from the http://rucsoundings.noaa.gov/ page.
